Oktoberfest Wieder (Again)

 In a small bowl, whisk together the liquid ingredients.   In a large bowl which together the dry ingredients. )  At the end of the cooking, you can blend 2 T. cornstarch with a little cold water and stir into cabbage just to thicken the liquid.   Stir back into pan and cook, stirring, until it comes to a boil and thickens. )  Simmer until the meat is tender, about 1 to 1½ hours. Heat the oil in a large pot or frying pan over medium heat. Oktoberfest in Germany and in many places around the world.  Then add one cup of cold water and the remaining ingredients. met a young German woman who had recently escaped from East Germany.  To thicken the sauce, stir a tablespoon or so of cornstarch to ½ c. water.  Push the batter through a spaetzle maker into a large pot of boiling water.   Put the cabbage into a large pot of salted boiling water.  Whisk a little of the cornstarch mixture into the sauce until it thickens. Stir the liquid ingredients until blended. Reduce the heat to low, and add the water and bouillon cubes (or beef stock).  Let the water come to a boil again, about 1 minute.  Add cold butter to a 10-inch springform pan.  Check once in a while and add a little water if necessary. Fold over the edges 1/2 inch on all sides, crimping with a fork to form a rim.  Brush the edges of the pastry with water.  Cook all this at low temperature with the lid slightly open until tender, about an hour.   Add the meat rolls and brown well on all sides.  (Alternatively, remove a cup of hot liquid and combine with 2 T. flour.  Heat in oven until melted, about 3 minutes.  Roll the pastry sheet into a 12-inch square.  Unfold the pastry sheet on the work surface.

Fine China Appraisal?

I have a full dinner set with 8 dinner plates, 8 salad plates, 8 bowls, serving platter, serving bowl, 8 saucers, 8 tea cups and other items that all belong to the same set. It is all Pre-World War II from Germany. It was made by "Rosenthal". It has a floral pattern and has gold leafing on the edges. Does anyone know about what the value of this would be? Or what is the best way to go about getting it appraised without some antique expert ripping me off? Thanks!

    Worth the extra money for automatic shut off

    I read a lot of reviews for the YM80 before buying and people complained about the lack of an automatic shut off. For an extra $10 this machine provides the shut off. My first batch of organic yogurt came out great. I think it is better for our health and environment to be eating yogurt out of glass jars and not adding a plastic container to the dump every time we eat yogurt. I made plain yogurt and added 2 tablespoons of dried organic milk. The yogurt was firm and nicely presented. It was somewhat tart so I added a tablespoon of honey just before eating, this added a little sweetness without taking away the yogurt flavor. I would recommend this to anyone who wants to have some control over what they are putting in their system. You can make this yogurt with skim, 1%, 2% or whole milk, organic milk or local milk, or even goat's milk. The shut off valve is convenient for people who don't want to keep track of when to unplug the yogurt machine.     Great machine. Easier than it sounds.

    This is just a great machine so far, but look, if you want to, you can obsess with complex formulas and temperatures and sterilization and what not, but you don't have to to make great yogurt. I have been experimenting for a while and I'm still working on it, but so far, this is what I've come up with...use the cups as a measuring device...I made one batch using a commercial, freeze dried yogurt starter...when I had eaten six of those, I used the seventh as a starter. This has just become part of my routine. I eat six and use the seventh for the next batch. So, in a big bowl I put one jar of yogurt, one jar heavy cream, five jars of milk and about two tablespoons of powdered milk. I stir it with a whisk until it's all incorporated well and then I pour it in the jars in the machine and set the timer. Now, this is where you need to experiment.     a revelation, but the timer IS superfluous

    Like reviewer Gypsy, I also read all the reviews bemoaning a lack of timer on the YM80. So I went for the YM100. I made the yogurt as per the instructions, set the timer for 10 hours, and came back 12 hours later only to find the yogurt was still quite warm, even though the timer was off. It came out too tangy for my tastes, because it had been incubating for 12+ hours. Since you must refrigerate the yogurt in order to stop the incubation, I feel as if the timer is unnecessary. Your yogurt will continue to cook no matter if the timer is off or on--the cover traps heat and moisture inside.Since I like my yogurt european style, i.e. flavorful but not overly sour, I found that incubating for about 8 hours, using the euro-cuisine starter, made the best yogurt. It has a larger surface area than some scales I've tried, which is great for the larger mixing bowls I like to use.This scale is very easy to operate, having just two buttons. It has a "Power" button, which also functions with "Tare" Weighing. The other button is the "Unit" button. The bonus measuring spoons are really thick plastic and the included micro-fiber cleaning cloth does a great job of keeping finger prints off.With the "Tare weighing" function, I can "zero out" the weight of whatever container I'm weighing ingredients with, taking the guess work out of subtracting what my container weighs. This scale also is very accurate and has the ability to measure very small weights. It measured a sheet of notebook paper easily and accurately.This scale is very easy to clean!     Accurate and a sleek design

    I received this scale from Procizion in order to test it and provide a review. I do most of my cooking using weight measurements instead of volume measurements, as I find it to be much more accurate and easier to use, especially with baking. Previously I have been using a combination kitchen scale/mp3 player, which works great, but is way too small. The Procizion scale is very thin and has a glass-top surface that is easy to wipe down and clean. Operation is very easy, with your two main buttons being the power button and tare button to reset it after you have placed a container on it. I used weights to calibrate it and test the accuracy, and I found it to be very accurate. Readouts come up quickly, and you can easily change your measurement options from grams to ounces, etc. I liked the large surface, so I can place bowls and other things on it which are usually too big for other scales.My only complaint with it, was that the front feet on the bottom of it are set two far... 4/5 Scott - See all my reviews, February 4, 2014

I have been using it to carve a double bass, and I am able to come with 1.5 millimeters of the finished surface with the inshave. It comes well sharpened, but I ran it across a strop and it works like a dream. I recommend this tool to chairmakers and stringed instrument builders.
